Egg Pulusu/Egg curry (andhra style)

Egg Pulusu or kodi guddu pulusu is a tasty and tangy recipe made with boiled eggs.it is good with white rice.


Ingredients:

2 to 3 boiled eggs

1 small onion chopped

2 green chilies vertically chopped

1 chopped tomato 

1/2 teaspoon mustard seeds

1/4  teaspoon turmeric powder

2 to 4 teaspoons red chilly powder

5 curry leaves

Small lemon size tamarind

1 teaspoon chopped coriander leaves

Salt as per taste

4 to 6 teaspoons of oil


Preparation :


Soak tamarind in water for 10 minutes.




Heat oil in a cooking vessel add mustard seeds and allow them to crackle.

Then add chopped onions ,green chilies,tomatoes,curry leaves ,salt and saute for 1 to 2 min .


Add turmeric powder red chilly powder,saute for 60 sec.

Add tamarind extract juice ,mix and cook for 2 min.


Now,add boiled eggs into it .

Put on low flame and cook for 5 to 6 min.

Finally ,add freshly chopped coriander leaves and serve hot with rice.
