Vankaya Pulusu

Vankaya/birnjal pulusu is one of the famous and delicious recipe .it is easy to make and it is good combination with rice.

Ingredients:


4 to 5 Brinjals(cut into pieces)


Lemon size tamarind (soak into 1 cup of water)

2 to 3 teaspoons red chilly powder

1/2 teaspoon turmeric powder

1/2 teaspoon mustard seeds

1 to 2 tablespoons oil

1  medium size chopped onion

1  tomato  cut into pieces

2 green chilies 

4 to 5 curry leaves

Salt as per taste


Preparation:

Heat oil in the pan add mustard seeds .

Then add chopped onion,green chilies,curry leaves fry them until onion comes into golden colour and add tomato pieces .

Add brinjal pieces ,turmeric powder,salt and allow them to fry for 2 mins.

Then add red chilly powder ,saute for 1 min.

Add tamarind water into the pan and cook for 5 to 7 mins.


Finally vankaya pulusu is ready to serve with rice.
